Over & Over Variation 13

So really beautiful version of this wine
As you know, Over & Over is a ripasso and solera system wine.
So it all started with a couple barrels in ’04 that we let sit for two years into ’06, took those barrels and re-passed them over the fresh fruit of Merlot, and Syrah, and Dornfelder.
Let those sit for 10 months, then ran the scales basically blend them together, bottled half as Variation 1 and let the other half sit until the next vintage
- did that all over again: Variation 2
- And again over and over: Variation 3 and 4
- So Variation 13: fourteen primary fermentations, fourteen malo-lactic fermentations
- Going back to ’04, ’06, ’07, 8, 9, 10, 12, 13, 14, 15, 16, 17, 18, and 19 - vintages, memories of this.
Represents North and South, warm and cold, youthful and mature, old and new - all of those things sort of blend together in this wine so
Great, really silky, aromatic, darkly fruited, great black plum, black raspberry, black boysenberry, great spice
Just gonna be delicious with so many foods
From fish dishes to poultry dishes, to game dishes, to meat dishes, to grain dishes, mushroom dishes
You know, light and rich at the same time, this wine is full of paradox
Mouthfeel like silk and those beautiful, long-lasting flavors, you get secondary and tertiary notes of maturity from the fruit that’s been re-passed over and over, but still a real youthfulness from the wine.
So just beautiful, super fun, great story, read all about it.
