2007 Sylvanus
The alluring smell of Muscat grapes, honeydew melon and white flowers spring from the glass along with pear and mineral notes. The 2007 Sylvanus is comprised of 43% Muscat Ottonel, 44% Pinot Grigio and 13% Pinot Bianco. Sylvanus is a Vin de Terroir, also known as a field blend, where all three grape varieties are grown, harvested, pressed and fermented together. This wine is the expression and story of this particular plot of land from the 2007 vintage told through those specific grapes. Sylvanus is not only the name of the wine, but the name of the vineyard and the legendary Green Man who this vineyard and wine honor. Sylvanus is wonderfully contradictory. It is sweetly aromatic yet bone dry. It is light and delicate in body and texture but fleshy and substantial at the same time. The wine has crisp acidity, moderate alcohol and a flavorful, persistent finish. Our 2007 version was fermented in half stainless steel barrels and half neutral French and Slovenian oak barrels. This is an aromatic, fresh and unoaked wine. Drink with a slight chill in the next year or so to take advantage of Sylvanus’ youthful qualities. Delicious as an aperitif this wine also makes a dynamite match with fresh cheeses, shellfish, light fish dishes, prosciutto and melon, frittatas and spring and summer veggies. 408 cases produced.

2008 MUDD Vineyard Sauvignon Blanc
This bright, vibrant, fresh white wine is a clear, straw color, bone dry and awake with mouthwatering flavors and aromas. Intense juicy grapefruit, lime, green melon, mineral and white flower are the primary smells and flavors of this clean, expressive, youthful wine. There is great balance of crisp natural acidity, medium body, moderate alcohol and classic intense Sauvignon fruit character. The delicious lengthy palate provides great satisfaction. The wine was fermented entirely in stainless steel tanks and is comprised of 97% Sauvignon Blanc and 3% Musque clone Chardonnay. All of the fruit was hand-harvested from the Mudd vineyard on September 26th and 27th 2008 and was whole cluster-pressed. We gravity-bottled 1,222 cases on February 24th, 2009. Pair this ripe, alive Sauvignon Blanc with fresh goat cheese, spring peas, asparagus & eggs, spring vegetables, ramps, raw shellfish, fluke or herbed salami. We believe Long Island Sauvignon Blanc is as good as or better than SB’s from anywhere else in the world and we think this bottle is a fantastic representation.

2008 Pinot Grigio
Our 2008 Pinot Grigio is alive with aromas and flavors of pears, white flowers, minerals and spice. This lovely dry white wine is clean, alluring and focused with lots of personality. We have often said that Pinot Grigio gets a bad wrap from the thin, dilute industrial examples and we are proud to illuminate the naysayers with a Pinot Grigio of such high quality. For our 2008 version all the fruit was hand–harvested, whole cluster-pressed, fermented in both stainless steel barrels (75%) and older French and Slovenian oak barrels (25%). The wine was handled minimally and bottled by gravity on April 23rd and 24th 2009. Comprised of 88% Pinot Grigio and 12 % Chardonnay the wine possesses medium-plus body, moderate alcohol, medium acidity and a long juicy, satisfying finish. The 2008 Pinot Grigio features fruit from both our home farm in Bridgehampton and some Pinot Grigio from the Mudd West vineyard on the North Fork, hence the blended Long Island AVA. We are quite proud of our Pinot Grigio and encourage you to drink it with local fish and shellfish (especially fried), sheep’s milk cheeses, zucchini frittatas, light chicken dishes and charcuterie. We made a whopping 1178 cases of this wonderful wine and suggest taking advantage of the real and very attractive quality/value ratio.

2007 Tocai Friulano
As the sole producer of Tocai Friulano on the East End of Long Island, we are thrilled to release the new vintage of this very special grape and wine. Our 2007 version is bone dry, medium-bodied with crisp acidity, has balanced alcohol and a persistent, satisfying finish. The color is a pale straw-lemon with some green tinges. The aromas are clean and alluring. Flavors and scents of sliced green almonds, white flowers, spice, minerals and white grapefruit including all of the pulp, pith and zest are evident in the glass and mouth. This delicious wine was created from 100% Tocai Friulano grapes that were hand-harvested here on our estate in Bridgehampton. The wine was fermented in eleven small stainless steel barrels, five older French and Slovenian oak barrels and one older French oak puncheon. This means 59% of the wine was in steel and 41% of the wine saw neutral oak. The 2007 Tocai spent three and a half months in barrels on its lees then was blended to a stainless steel tank where it spent another three and a half months before it was bottled by gravity on May 13, 2008. Tocai is the quintessential prosciutto wine and if given a choice select the Prosciutto di San Daniele that is native to Friuli-Venezia Giulia. You can also pair this wine wonderfully with fricos, stuffed squash blossoms, pasta dishes, risi e bisi (the classic pea and ham risotto) and a multitude of fish preparations. 2007 Sauvignon
This blended Sauvignon Blanc is inspired by the wines of Friuli-Venezia Giulia. Made from 89% Sauvignon Blanc and 11% Chardonnay this pale gold, dry white wine offers crisp, clean sensations and bursts of flavor akin to biting into a spiced lemon drop with a savory liquid center. There are complex aromas and flavors of herbs, resin, smoke, spice, minerals, citrus and tree fruits. This medium-bodied white has balanced alcohol and high acidity, and it provides a long, juicy, flavorful finish. The Sauvignon Blanc in the blend still retains much of its angular quality but is softened and rounded by the wild yeast portion, the wonderfully integrated oak component and the addition of Chardonnay. It is a Sauvignon Blanc for all seasons. Our Sauvignon is equally at home with a fluke dish containing herbs and citrus in the summer as with a cod dish utilizing mushrooms and pork in the winter. The 2007 Sauvignon was fermented in 32% stainless steel and 68% French and Slovenian oak of which 23% was new and fermented with wild yeast. The wine spent six months in barrels on its lees then was blended to a stainless tank where it spent another two months before being bottled by gravity on May 22, 2008. Play with this wine at the table and have fun discovering its versatility. See how well it goes with fresh and aged sheep or goat’s milk cheeses, raw and cooked shellfish dishes and don’t forget about eggs, chickens and the pig too! Cheers! 458 cases produced.

2007 Vino Bianco
From 91 cases back in 2001 to 1208 cases in 2007 this wine has grown in stature and complexity every year to become a flagship wine for us. We are thrilled to offer you our 2007 Vino Bianco. This is a delicious, dry, medium-bodied white wine that is lemony-gold in color. It offers complex, deep aromas with high-toned accents. The 2007 version is made up of 32% Tocai Friulano, 25% Sauvignon Blanc, 17% Pinot Grigio, 9% Chardonnay (Dijon clone 96) and 17% Chardonnay (“Musque” clone). This is a symphonic white wine that offers layers of texture and flavor. Minerals, citrus fruit, tree fruit, stone fruit and tropical fruit all play off one another. There are smells and flavors of green apples, lemons, limes, white peaches, pineapple, juicy ripe pears, brown spices, and that magical white floral quality, almost like acacia blossoms. The wine is clean with pure, beautiful penetrating aromas. There is a soothing, satisfying balance of acid, moderate alcohol (12.8%), ripe fruit and sweet spice. The wine is extremely long and possesses great texture and mouthfeel. The fruit was all hand-picked from our home farm in Bridgehampton, the original Mudd Vineyard in Southold, the Smithens Vineyard and the new plantings at Mudd West on the North Fork. Some of the varieties were fermented separately, some were fermented together. Stainless steel tanks, stainless steel barrels, new and older French and Slovenian oak barriques as well as puncheons and hogsheads were all used (only 10% was new oak) and the various lots were then selected and blended. This wine displays great versatility at the table and can be paired with lighter fish and shellfish dishes or matched wonderfully with richer pastas, chicken, pork and veal preparations. The 2007 Vino Bianco was bottled by gravity on June 17th, 2008. 1208 cases were produced.

2007 Mosaico
There is something magical about a blended wine from one specific spot; the complexities, nuances and realities of site and vintage are expressed in a delicious and unique way. Mosaico is an exotic field blend that comes from the western complanted block in our Sylvanus Vineyard on our estate in Bridgehampton. This is a dry white wine with a clear, pale gold appearance. There are lots of clean, mineral driven aromas with exotic flourishes of melon and tangerine. The wine is medium-bodied with medium acid and medium alcohol. There is a seductive, polished mouthfeel and flavors that alternate between tree fruit, stone fruit, citrus fruit and florality. This wine is made from 32% Pinot Grigio, 29% Chardonnay, 14% Sauvignon Blanc, 12% Muscat, 7% Tocai Friulano and 6% Gewurztraminer. All the varieties were harvested together, pressed together and fermented together except for the Muscat. The Muscat was separated out and fermented on its skins, and after a stint in new oak, blended back in. Our 2007 Mosaico was fermented in a variety of vessels; a stainless steel tank and stainless steel barrels, two Slovenian oak barrels, two Slovenian oak hogsheads and one Slovenian oak puncheon. A total of 27% of the wine saw new oak. This wine is complex, playful and satisfying. There is great intensity of flavor and a wonderfully lengthy spicy finish. Mosaico is a great match for wild stripped bass, tilefish, roast chicken, sausages, stuffed pastas, pork and risottos. Salute! 568 cases produced.

2007 Scuttlehole Chardonnay
We love Chardonnay! Often we crave a pure, clean style that celebrates the fruit of our region and is very versatile at the table. Our 2007 Scuttlehole Chardonnay certainly fits the bill. This wine is fermented in stainless steel tanks with no malo-lactic fermentation resulting in a dry wine with flavors and aromas of minerals, green apples and lemon curd. This fresh, unoaked wine is medium-bodied with balanced acidity and alcohol. The wine is wonderfully juicy with the textural interplay of both linearity and roundness that provides great pleasure and interest. As always the fruit for this wine was hand-picked, whole cluster-pressed, handled minimally and bottled by gravity. Our 2007 Scuttlehole Chardonnay offers boundless pairing potential at the table. Comfortable with either complimentary or contrasting flavors, try this wine with crisp shellfish or oily bluefish; fresh cheeses, a citrus roast chicken or a spring salad with duck confit. 2007 Cuvee Tropical
We are happy to offer you a taste of sunshine with the release of our 2007 Cuvee Tropical. Possibly the finest version we have released yet of this cuvee, the 2007 is alive with white peaches, green melon, apples, minerals, white flowers, tropical fruits like pineapple and that undeniable, alluring grape scent from the Muscat. This straw colored white wine is bone dry, medium-bodied with moderate alcohol and a juicy acid balance. The wine is comprised of 94% Chardonnay and 6% Muscat with a smidgen of Pinot Grigio. The Chardonnay is the special musque clone from the Mudd Vineyard and was fermented in stainless steel. The Muscat also comes from the Mudd Vineyard and was fermented on its skins, then raised in new French oak and blended into the final wine. This is a delightful, gregariously aromatic, satisfying, jewel-like white wine. The 2007 Cuvee Tropical is ideal as an aperitif or as a match with mildly spicy foods and Pacific Rim flavors. The Cuvee is also at home with shellfish, white-fleshed fish and fresh cheeses. Our Cuvee Tropical is always comfortable with a variety of world cuisines from Japanese to Indian to Mexican to Caribbean to Spanish and back to American, so we encourage experimentation. We made 857 cases of this wine and it was bottled by gravity on July 15, 2008. Oh, and please do not drink this wine too cold - instead consume after just a few minutes in the fridge to encourage its jovial, playful personality. Cheers!

2007 Brick Kiln Chardonnay

The 2007 Brick Kiln is a beautiful, dry, medium-bodied, barrel-fermented Chardonnay. Flavors and aromas of pears and apples, brioche and toast, citrus and spice are awash in this long and satisfying white wine. Balanced alcohol and acidity provide the framework for a juicy, flavorful wine with a persistent finish. The wine is 100% Chardonnay that was raised in older French, Hungarian and Slovenian oak barrels for ten months. All the fruit was hand-picked from our Brick Kiln vineyard and was whole cluster-pressed, handled minimally and bottled by gravity. While this wine is a dynamite match for richer fish and shellfish dishes like scallops, lobster, salmon and char, it is just as comfortable with a roast chicken or some mushroom risotto. In a world awash in barrel-fermented Chardonnay we are confident that our 2007 Brick Kiln has the quality, character and flavor profile to put a smile on your face from ear to ear and leave you humming…yummy! 2007 L'Enfant Sauvage Chardonnay
This is a Chardonnay that is left to its own devices. Fermented with naturally-occurring wild yeast and allowed to go through a malo-lactic fermentation on its own, we barely touch this wine. We hand-pick the grapes from our Brick Kiln and Sculpture Garden vineyards, gently press them and put the juice in brand new French and Slovenian oak barrels for thirteen months and let the wine make itself. What we get year after year is astonishing. The 2007 L’Enfant Sauvage is a beautiful rich gold color. The wine is dry, full-bodied, has 13.1% alcohol (naturally, no chaptalization) along with balanced acidity. There is intense fruit character and good concentration. The rich, creamy flavors remind one of golden delicious apples; some baked and some fresh, brioche, brown spice, pears, butter and a touch of candied lemon. The flavors are alive and complex and the wine possesses a long persistent finish. This is likely the most restrained and elegant version of this wine yet, and hurray, we have 408 cases! Pair our 2007 L’Enfant Sauvage with rich fish and shellfish dishes like lobster, scallops, wild salmon, artic char, shad roe or alternately with roast chicken, veal dishes or preparations utilizing truffles. 1 case maximum per customer.

2007 Clones
“Clones” is an exotic white blend that is based primarily on ten distinct clones of Chardonnay and also includes five other grape varieties. The 2007 version is composed of 78% Chardonnay, 11% Tocai Friulano, 7% Sauvignon Blanc, 1% Gewurztraminer, 2% Aligote and 1% Semillon. This is a delicious, dry white wine that is alive with baked apples, poached pears, brown spices, lemons, quince, peaches, brioche and a touch of vanilla and honey. The wine possesses great texture and has roundness and richness on an elegant frame. “Clones” is medium-plus in body, has moderate alcohol (12.8%) and juicy acidity that carries through a very long finish. All the fruit for this wine was hand-harvested, pressed and fermented together. This year 46% of the wine was fermented in stainless steel barrels and 54% was fermented and matured in French oak barrels for ten months. Of the portion that was reared in oak, 54% was new oak and 46% was older oak. Twenty-nine percent of the 2007 “Clones” was fermented using wild/ambient yeast which adds a deeper, broader dimension to the wine. Our 2007 “Clones” is versatile at the table and performs as comfortably with wild striped bass or artic char as it does with a simply prepared grilled pork loin and fresh vegetables or roast chicken. This is a unique blend that is just plain yummy and goes down easy so we hope you find loads of flavor and fun drinking and experiencing our 2007 “Clones”. Only 188 cases were produced and the wine was bottled by gravity on August 21st, 2008.

2007 Meditazione
Meditazione is an exotic, non-traditional white blend inspired by the “Vino da Meditazione” wines in the Friuli region of Northeast Italy. This is our fourth vintage of this wine and we are thrilled that the following for our Meditazione has soared. Our 2007 version is comprised of 35% Tocai Friulano, 35% Sauvignon Blanc, 13% Muscat Ottonel, 12% Pinot Grigio and 5% Pinot Bianco. All the fruit for our Meditazione was hand-harvested, de-stemmed and the grapes were fermented together on their skins in an open top fermenter. Raised in two new Slovenian oak hogsheads and one old Hungarian oak puncheon for thirteen months, this is a textured, aromatic and delicious white wine that appeals to both the senses and the intellect. Our 2007 Meditazione is dry, medium plus in body, has moderate alcohol (only 11.5%) and juicy acidity. The flavors are concentrated and complex and reminds one of chamomile tea, orange zest and blossom, fresh and dried apricots, apple skin, brown spice, nuts, peach and honey. This rich wine has sex appeal and a long persistent finish. Drink our 2007 Meditazione with squab, quail, pork belly, sausages, aged cheeses like gouda, mimolette, gruyere, comte and dishes containing nuts, seeds, squash and sherry sauces. Do not over chill this wine as it will mute the flavors and try thinking about it more in the context of a red wine which may open a new universe to you. Only 108 cases were produced so do not hesitate as there is not much to go around. Six bottle limit per customer.

2007 Envelope
We have continued to push the envelope with this wine until it is just right. The ‘04 and ‘05 versions were all Chardonnay. The 2006 saw the addition of Gewurztraminer which brought wonderful concentrated exotic aromatics to the fore. But we wanted some lightness and floral lift in the wine so with the 2007 Envelope we have introduced Malvasia Bianca to the blend and we love the results. The 2007 Envelope is comprised of 84% Chardonnay, 11% Gewurztraminer and 5% Malvasia Bianca. This is an exotic white wine inspired by the “Vino da Meditazione” wines produced in the Friuli region of Northeast Italy. All the grapes were hand-harvested from our estate in Bridgehampton, de-stemmed and fermented on their skins in an open top fermenter. The wine was raised in two new and one older French oak barrel for thirteen months. The flavors and aromas are reminiscent of spiced apples, tangerine, pears, peaches, honey, flowers, lemon and brown spices. These are clean, complex, sexy and concentrated flavors and aromas. The 2007 Envelope is bone dry, possesses full body, balanced acid, moderate alcohol (12.3%) and a long satisfying finish. Drink this wine with chicken and truffles, rich and complex seafood dishes, game birds and pork. Do not chill this wine too much either as you will mute its expression. Only 69 cases were produced! Our 2007 Envelope clearly displays our philosophy of always testing the boundaries to create deliciousness in our wines. 2008 Rosato di Cabernet Franc -Croteau Farm Vineyard

This is the raw-bar rosato! The 2008 is made from 100% hand-harvested Cabernet Franc grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a dry, crisp, medium-bodied rosé. The color is the palest of the three rosés and displays an elegant coppery, slightly salmon hue. In this vintage, as in the past, the flavors and aromatics of the Cab Franc are the lightest and most ethereal. This wine possesses a beautiful mineral, floral, citrus and peach profile coupled with a long flavorful finish. Hints of light strawberry and raspberry are apparent in this clean, fresh and delicious rosato. Drink this wine as an aperitif or with shellfish, fluke, flounder, sushi, ceviches, fresh cheeses and fried foods. 369 cases made.

2008 Rosato di Merlot - Mudd Vineyard
The 2008 is created from 100% hand-harvested Merlot grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a dry, juicy, medium-bodied rosé. This year the color is a tone or two darker than the Cab Franc; light but with a slightly pinker hue. The flavors and aromatics are reminiscent of watermelon, red and yellow plums, spice and minerals. The wine has a persistent finish, great character and a wonderful zing. The 2008 Rosato di Merlot displays moderate alcohol and balanced acidity. Beautiful texture and delicious playful flavors define the most versatile of the three; pair this wine with almost anything…from tomatoes and mozzarella to hanger steak with chimichurri sauce or a simple plate of charcuterie. 388 cases made.

2008 Rosato di Cabernet Sauvignon -Mudd Vineyard
This is the rosato for the grill! Once again the 2008 is produced from 100% hand-harvested Cabernet Sauvignon grapes that were whole cluster-pressed and fermented in a stainless steel tank. This is a dry, medium-plus bodied rosé. This wine has the most color of the three rosati; a beautiful jewel-like pinkish red. It also has the most alcohol and the most acid providing great pleasure and freshness. The nose is awash in cherries, raspberries, currants, earth and flowers. This is a delicious, balanced and persistent wine with wonderful fruit intensity and clean, satisfying finish. Match this one with smoked fish and heartier fare from the grill; beef, lamb, chicken, pork, BBQ, lobster, sausage, tuna, vegetables, and mushrooms. 404 cases made.

2007 Rosso Fresco
Rosso Fresco is an easy-going red blend whose varieties and proportions change with each vintage. The 2007 Rosso Fresco is created from 80% Merlot, 14% Syrah, 2% Blaufrankisch, 2% Cabernet Franc and 2% Dornfelder. The wine has a ruby red color with purple overtones. This is a dry, medium-bodied, balanced and juicy red wine with plum, black cherry, black raspberry, Asian and brown spices, a touch of smoke and a slight meaty/gamey note. Rosso Fresco is a playful, full-flavored, friendly red wine that pairs well with pastas and just about any fish, fowl or four-legged food you serve it with. One third of this delicious red wine never saw any oak and was raised in stainless steel, the other two thirds spent nine months in mostly older French and Slovenian oak and delivers a silky texture with a rustic note. Our 2007 Rosso Fresco has great balance, impressive length and real character for a straightforward red wine and thus offers terrific value. The fruit came from the North Fork; from Steve Mudd’s vineyards, the Croteau Farm vineyard and Sam McCullough’s vineyard. All the grapes were hand-harvested, de-stemmed, crushed by foot, fermented in small one ton bins and punched down by hand. The wine was handled minimally and bottled by gravity on July 28, 2008. Enjoy our 2007 Rosso Fresco at cellar temperature over the next two to three years. 1208 cases produced.

2007 Blaufränkisch
Our 2007 Blaufrankisch is made from 75% Blaufrankisch and 25% Merlot all from our estate here in Bridgehampton. Once again all the fruit was hand-picked, de-stemmed, crushed by foot and punched down by hand. The wine was handled minimally and bottled by gravity on November 5, 2008. The 2007 Blaufrankisch is light purple/ruby red in color, medium bodied, dry, has moderate alcohol (just 12.2%) and juicy acidity. Flavors and aromas of spice, black pepper, plum, meat, black cherry, black raspberry, blackberry and a hint of mint define the wine. There are soft, polished tannins with wonderfully integrated oak from twelve months in older barrels and a plump, polished texture with a delicious finish. As always this is a great choice to serve with game meats, whether feathered or furred as well as sausage, pork, pates, grains, soy and dishes with Asian spices. 2006 Sculpture Garden
Our Sculpture Garden vineyard is near and dear to our hearts and we are always so pleased to offer you the new vintage. This Merlot based blend comes entirely from our estate here in Bridgehampton and is made from 95% Merlot and 5% Blaufrankisch. This ruby red wine is dry, medium bodied, has balanced acidity and medium alcohol (13.3%). The flavor and aromatic profile are defined by red and black cherries, plump juicy black plums, spice and a purple florality. There is a touch of smoke and wonderfully integrated oak in this beautiful, elegant, complex and alluring red wine. This wine is ripe but not heavy and offers restraint while satisfying one’s hedonistic desires. Our 2006 Sculpture Garden spent 22 months in oak (27% were new barrels) and was bottled unfined and unfiltered. As always all the fruit was hand-picked, de-stemmed, crushed by foot and punched down by hand and shovel. Made from yields well under two tons per acre this wine is limited in quantity, only 158 cases were produced. The 2007 Sculpture garden possesses supple integrated tannins, nice intensity of fruit and persistent length on the palate. This wine is delicious now and will drink well over the next five to seven years. 2006 Research Cab

Plums, black cherry, black raspberry and blueberry are the fruits that come to mind when you smell our new vintage of Research Cab. This elegant, delicious, medium-bodied red wine has moderate alcohol, juicy acidity and a long satisfying finish. The color is a light purple/ruby red with great clarity. There is a beguiling floral aspect that reminds us of purple blossoms and the flavors again feature those red, blue and black fruits with well-integrated vanilla, spice and smoke character contributed by the twenty-two months the wine spent in barrel. Our 2006 Research Cab spent that time in two one-year and one three-year-old French oak barriques and was comprised of a dizzying 39% Merlot, 27% Cabernet Franc, 20% Cabernet Sauvignon, 4% Blaufrankisch, 4% Petit Verdot, 2% Syrah, 1.5% Sangiovese, 1.5% Barbera, and 1% Malbec. All of this fruit came from our friend’s “Research Vineyard” on the North Fork except for the Cabernet Franc which came from our estate in Bridgehampton. As always all the fruit was hand-picked, de-stemmed, crushed by foot and punched down by hand. The wine was handled minimally and was bottled unfined and unfiltered. Over time the wine may throw sediment. There were only 69 cases of this tasty wine produced and while delicious now the wine will improve over the next five to six years and drink well for a decade. Pair our 2006 Research Cab with duck, pork, mushrooms, lamb, hard cheeses or anything your heart desires with a silky, sexy, supple red wine.

2006 MUDD
The 2006 MUDD is a delicious red blend made up of 72.6% Merlot, 19.5% Cabernet Sauvignon, 6.4% Blaufrankisch and 1.5% Dornfelder. The color is a clear, beautiful ruby red. This dry wine has ripe, pure flavors and aromas of plum, black cherry, black raspberry, earth and spice, which are balanced by juicy acidity, medium body and moderate alcohol. A silky texture displaying integrated, plush tannins leads into a lovely lengthy finish. Almost all of the fruit came from the Mudd and Mudd West vineyards along with some beautiful Merlot from Sam McCullough’s vineyard. It was all picked by hand, de-stemmed, crushed by foot and punched down by hand and shovel. The wine spent twenty-two months in the cellar in 20% new oak and the rest older oak barrels. Our 2006 MUDD was bottled by gravity on August 28th 2008 and 448 cases were produced. It was not fined or filtered and may throw a deposit over time. The wine is quite tasty now but will certainly improve during five to seven years of aging. Match this wine with duck confit, leg of lamb, mushrooms & grains, veal or rich fatty fish like black cod or wild salmon, especially if there is some bacon involved.

Over & Over-Variation 2

This is a ridiculously fun and delicious red wine! There are people in the world making red wines with a ripasso method and there are people in the world using a solera system of blending for some red wines but we know of no one, other than us, who have put both together to create this original and tasty red wine. It all began with four barriques of 2004 Merlot that was taken out of barrel and re-passed over the fresh 2006 Merlot and Dornfelder fruit. The wine underwent another primary fermentation and was racked to barriques, hogsheads and puncheons where it underwent another malo-lactic fermentation. Half of the wine was taken and bottled after ten months in oak, and this was Variation One. The other half remained in barrel until the next harvest where it was re-passed over the 2007 Merlot, Syrah and Dornfelder fruit. It was all repeated and we bottled half as Variation Two. We have done it again this harvest and it will go on Over & Over. So what does it taste like? Violets, black raspberries, plums, spice and game are the first descriptors that come to mind in this well-balanced, dry, medium-bodied and integrated red wine. Delicious, long complex flavors and textures fill one’s mouth and mind. This is a wine that reflects the old and the new, the North and the South, the warm and the cool and provides us with something entirely different to experience and think about. Drink this wine with all manner of game birds, pork, veal, grains, mushrooms, tubers and root vegetables. Salute! 188 cases produced.
