2008 Sylvanus
Sylvanus is a wine of place, a vin de terroir. This dry, aromatic white wine is a field blend comprised of 43% Muscat, 44% Pinot Grigio and 13% Pinot Bianco all grown together, harvested together and fermented together. Sylvanus is not only the name of the wine, but the name of the vineyard and the legendary Green Man who this vineyard and wine honor. In creating a field blend as opposed to blending different wine lots together, we are capturing the essence of our time and place as expressed by the vineyard Sylvanus. All of the fruit was hand-harvested, whole cluster-pressed, half fermented in stainless steel barrels and half older oak barrels. The wine was handled minimally and bottled by gravity on June 27, 2009. Our 2008 Sylvanus is pale straw in color and possesses a clean, aromatic personality. The wine is medium-bodied, has moderate alcohol and acid. The flavors and aromas are reminiscent of lemons, melons, white flowers, pears and minerals. Our Sylvanus is juicy, tangy and alive with a long gratifying finish. This is the perfect aperitif wine and also pairs with stuffed squash blossoms, fresh cheeses, oysters and clams on the half shell, light salads, or charcuterie. There is a lovely interplay between the light, ethereal qualities of this wine and its satisfying ripeness and swelling texture. 508 cases of the 2008 vintage were produced and we are happy to offer you this playful yet serious wine.

2009 Sauvignon Blanc Mudd West Vineyard
This is a delicious, dry, expressive, bright, flavorful, jewel-like white wine. Sauvignon Blanc has always been important in our portfolio and is becoming more and more important in general on the East End of Long Island. This wine has persistent deliciousness. It is fresh, unoaked and offers clarity and purity of Sauvignon Blanc fruit. This wine was hand-harvested, whole cluster pressed and fermented in Stainless steel tanks. It did not go through malo-lactic fermentation. There is pronounced intensity of aromas and flavors, long length, complexity of fruit character and wonderful balance of crisp acidity, medium body, balanced alcohol and texture and fruit expression. The Mudd West Vineyard is in Hallockville (Aquebogue) and is a warm dry site. The soil is predominately Riverhead Loam. The Mudd West Vineyard was planted in 2005 making the vines there 5 years old. The Mudd West bottling emphasizes the greener aspects of Sauvignon Blanc with aromas and flavors of cut grass and hay, lime, lots of white grapefruit, minerals and tart green tree fruit like granny smith apples and green pears. This wine is delicious, racy and fun. Our 2009 Mudd West Sauvignon Blanc will pair wonderfully with anything from the raw bar, white fleshed fish dishes, asparagus and other spring vegetables, ceviches, citrus grilled chicken and fresh sheep and goat’s milk cheeses. 808 cases made.

2009 Sauvignon Blanc Mudd Vineyard

We are very excited to offer you our 2009 Mudd Vineyard Sauvignon Blanc. This is a delicious, dry, expressive, bright, flavorful, jewel-like white wine. Sauvignon Blanc has always been important in our portfolio and is becoming more and more important in general on the East End of Long Island. This wine displays persistent deliciousness. This wine is fresh, unoaked and offers clarity and purity of Sauvignon Blanc fruit. The grapes for this wine were hand-harvested, whole cluster pressed and fermented in stainless steel tanks. The wine did not go through malo-lactic fermentation. There is pronounced intensity of aromas and flavors, long length, complexity of fruit character and wonderful balance of crisp acidity, medium body, balanced alcohol and texture and fruit expression. The Mudd Vineyard is in Southold and is the oldest existing on Long Island. The site’s soil is Haven Loam series profile. It was planted in 1975 and that makes the Sauvignon Blanc vines 35 years old. The tasty and refreshing Mudd bottling shows mineral and white flowers, the citrus fruit is more like tangerine. There is stone fruit like white peaches and even hints of tropical fruit like mango and green papaya. This wine is delicious, racy and fun. Our 2009 Mudd Vineyard Sauvignon Blanc will pair wonderfully with anything from the raw bar, white fleshed fish dishes, asparagus and other spring vegetables, ceviches, citrus grilled chicken and fresh sheep and goat’s milk cheeses. 408 cases made.

2008 Pinot Grigio
Our 2008 Pinot Grigio is alive with aromas and flavors of pears, white flowers, minerals and spice. This lovely dry white wine is clean, alluring and focused with lots of personality. We have often said that Pinot Grigio gets a bad wrap from the thin, dilute industrial examples and we are proud to illuminate the naysayers with a Pinot Grigio of such high quality. For our 2008 version all the fruit was hand–harvested, whole cluster-pressed, fermented in both stainless steel barrels (75%) and older French and Slovenian oak barrels (25%). The wine was handled minimally and bottled by gravity on April 23rd and 24th 2009. Comprised of 88% Pinot Grigio and 12 % Chardonnay the wine possesses medium-plus body, moderate alcohol, medium acidity and a long juicy, satisfying finish. The 2008 Pinot Grigio features fruit from both our home farm in Bridgehampton and some Pinot Grigio from the Mudd West vineyard on the North Fork, hence the blended Long Island AVA. We are quite proud of our Pinot Grigio and encourage you to drink it with local fish and shellfish (especially fried), sheep’s milk cheeses, zucchini frittatas, light chicken dishes and charcuterie. We made a whopping 1178 cases of this wonderful wine and suggest taking advantage of the real and very attractive quality/value ratio.

2008 Tocai Friulano-Sylvanus Vineyard
Not only are we the only producer growing and making Tocai Friulano on the East End of Long Island, and one of only a handful in the United States, we now are among the rare few who offer two vineyard designated Tocais. Earlier this year we released the new bottling of Tocai from the Mudd West vineyard on the North Fork for the first time. Now we are excited to offer you the new vintage of our Tocai Friulano from our home farm in Bridgehampton from the Sylvanus vineyard. This is the Tocai we have been producing for years and as in the past was fermented and raised in 55% stainless steel barrels and 45% older French and Slovenian oak barrels for ten months. This white grape is native to the Friuli-Venezia Giulia region in Northeast Italy and our version offers wonderfully fresh aromas and flavors of minerals, citrus fruits, fresh green almonds, spice and a salty tang. The wine is bone dry and possesses medium body, moderate (12.9%) alcohol, juicy acidity and great persistence on the long flavorful finish. Our Tocai has a great mouthfeel and manages the very gratifying textural paradox of a light, fresh, aromatic wine with a weighty, fleshy, fluidity that is just delightful. As always, all the fruit was hand-harvested, whole cluster-pressed and handled minimally. Our 2008 Tocai Friulano Sylvanus vineyard was bottled by gravity on July 24, 2009. This is the quintessential prosciutto wine and also works well with other salumi and fresh cheeses, fricos, pastas and risotto, clams and white fleshed fish dishes. The label this year includes the Sylvanus vineyard designation. This wine has always carried a Hamptons appellation and has come from the Sylvanus vineyard but with the introduction of the Mudd West Tocai we have decided to feature the vineyard from our home farm as well. We hope you enjoy this delicious and unique white wine. Beware of over chilling the wine and muting the aromatics and enjoy this wine during is vibrant youth over the next one to three years. 398 cases produced.

2008 Tocai Friulano-Mudd West Vineyard

As most of you know we always have something new in the works. This time it is a new wine, from a new Tocai Friulano planting on the North Fork. In 2005 we planted the Mudd West vineyard with Steve Mudd with several varieties including Tocai Friulano. We are the only producer of Tocai Friulano on Long Island and one of a handful in the United States. We have made Tocai from our Sylvanus vineyard in Bridgehampton since 2002 and thought it would be cool to make one from the site on the North Fork. The soils are a bit different, the North Fork site a bit drier and a degree or two warmer. Now we offer you the inaugural vintage of Tocai Friulano from the Mudd West Vineyard. This dry white wine was fermented entirely in small stainless steel barrels and offers medium plus intensity of aromas and flavors. There are white flowers, white peaches, spices, minerals and citrus fruits. The wine is medium-bodied, has moderate alcohol and acid. There is a lengthy, tangy finish. As always, the fruit was hand-harvested and whole cluster-pressed. The wine was bottled by gravity on January 9, 2009. Match this long, pure, tasty wine with prosciutto, salami, porchetta, risi e bisi, fresh pea risotto or pasta, fava bean salads, fried fluke or fricos. Only 158 cases were made so do not wait, this wine will only be available to the wine club and a few select restaurants. We recommend drinking this wine in the first 1-3 years of its life.

2008 Sauvignon
This is a Sauvignon Blanc for all seasons. Our 2008 Sauvignon is composed of 95% Sauvignon Blanc and 5% Chardonnay. This delicious, complex, dry white wine was fermented and raised in 40% new oak, 40% older oak and 20% stainless steel barrels. Part of the wine (56%) was fermented with selected yeasts and part (44%) was fermented with ambient or “wild” yeast. These factors help create a Sauvignon Blanc with more weight and body, more resinous qualities and more opportunities for pairing with richer foods. This expressive Sauvignon offers aromas and flavors of tree fruits, lemon confit, sticky herbs and spices. There is great texture and alternates between plump and swelling, to angular and racy sensations. This is what makes this wine so great for the weightier more complex dishes. Imagine this wine with bacon wrapped monkish or veal Marsala or smoked trout and your mouth starts to water like it will when you experience the bright juicy acidity of our 2008 Sauvignon. Of course the classic pairings of oysters and clams on the half shell and fresh chevre will work quite well but again imagine if those oysters were fried and served with a pork component or the clams were stuffed and baked or the goat cheese was found inside a fried squash blossom and you begin to understand the potential and place for this wine at the table. As always, all the fruit for this wine was hand-harvested, whole cluster-pressed and handled minimally. The Sauvignon Blanc comes from the North Fork from both the Croteau and Mudd West Vineyards and the Chardonnay was grown on the South Fork at our home farm, thus the Long Island designation. This wine was bottled by gravity on July 27, 2009. Our 2008 Sauvignon has a persistent finish and is long, flavorful and dynamic just as we hope your experience is with this wonderful new vintage of this wine.

2007 Vino Bianco
From 91 cases back in 2001 to 1208 cases in 2007 this wine has grown in stature and complexity every year to become a flagship wine for us. We are thrilled to offer you our 2007 Vino Bianco. This is a delicious, dry, medium-bodied white wine that is lemony-gold in color. It offers complex, deep aromas with high-toned accents. The 2007 version is made up of 32% Tocai Friulano, 25% Sauvignon Blanc, 17% Pinot Grigio, 9% Chardonnay (Dijon clone 96) and 17% Chardonnay (“Musque” clone). This is a symphonic white wine that offers layers of texture and flavor. Minerals, citrus fruit, tree fruit, stone fruit and tropical fruit all play off one another. There are smells and flavors of green apples, lemons, limes, white peaches, pineapple, juicy ripe pears, brown spices, and that magical white floral quality, almost like acacia blossoms. The wine is clean with pure, beautiful penetrating aromas. There is a soothing, satisfying balance of acid, moderate alcohol (12.8%), ripe fruit and sweet spice. The wine is extremely long and possesses great texture and mouthfeel. The fruit was all hand-picked from our home farm in Bridgehampton, the original Mudd Vineyard in Southold, the Smithens Vineyard and the new plantings at Mudd West on the North Fork. Some of the varieties were fermented separately, some were fermented together. Stainless steel tanks, stainless steel barrels, new and older French and Slovenian oak barriques as well as puncheons and hogsheads were all used (only 10% was new oak) and the various lots were then selected and blended. This wine displays great versatility at the table and can be paired with lighter fish and shellfish dishes or matched wonderfully with richer pastas, chicken, pork and veal preparations. The 2007 Vino Bianco was bottled by gravity on June 17th, 2008. 1208 cases were produced.

2007 Mosaico

There is something magical about a blended wine from one specific spot; the complexities, nuances and realities of site and vintage are expressed in a delicious and unique way. Mosaico is an exotic field blend that comes from the western complanted block in our Sylvanus Vineyard on our estate in Bridgehampton. This is a dry white wine with a clear, pale gold appearance. There are lots of clean, mineral driven aromas with exotic flourishes of melon and tangerine. The wine is medium-bodied with medium acid and medium alcohol. There is a seductive, polished mouthfeel and flavors that alternate between tree fruit, stone fruit, citrus fruit and florality. This wine is made from 32% Pinot Grigio, 29% Chardonnay, 14% Sauvignon Blanc, 12% Muscat, 7% Tocai Friulano and 6% Gewurztraminer. All the varieties were harvested together, pressed together and fermented together except for the Muscat. The Muscat was separated out and fermented on its skins, and after a stint in new oak, blended back in. Our 2007 Mosaico was fermented in a variety of vessels; a stainless steel tank and stainless steel barrels, two Slovenian oak barrels, two Slovenian oak hogsheads and one Slovenian oak puncheon. A total of 27% of the wine saw new oak. This wine is complex, playful and satisfying. There is great intensity of flavor and a wonderfully lengthy spicy finish. Mosaico is a great match for wild stripped bass, tilefish, roast chicken, sausages, stuffed pastas, pork and risottos. Salute! 568 cases produced.

2008 Scuttlehole Chardonnay
We love Chardonnay! Often we crave a pure, clean style that celebrates the fruit of our region and is very versatile at the table. Our 2008 Scuttlehole Chardonnay certainly fits the bill. This wine is fermented in stainless steel tanks with no malo-lactic fermentation resulting in a dry wine with flavors and aromas of minerals, green apples, citrus fruit and lemon curd. This fresh, unoaked wine is medium-bodied with balanced acidity and alcohol. The wine is wonderfully juicy with the textural interplay of both linearity and roundness that provides great pleasure and interest. There is a creaminess that is unmistakably Chardonnay. As always the fruit for this wine was hand-picked, whole cluster-pressed, handled minimally and bottled by gravity. The Chardonnay (from the classic Dijon clones) was harvested from vineyards on both the North and South forks, thus the Long Island AVA. Our 2008 Scuttlehole Chardonnay offers boundless pairing potential at the table. Comfortable with either complimentary or contrasting flavors, try this wine with crisp, briny shellfish or oily bluefish and salmon; fresh cheeses, a citrus roast chicken or a fresh salad with duck confit. 2008 Cuvee Tropical
Our 2008 Cuvee Tropical is alive with peaches, green melon, apples, minerals, white flowers, tropical fruits like pineapple and that undeniable, alluring grape scent from the Muscat. This straw-colored white wine is bone-dry, medium-bodied with moderate alcohol and has a juicy acid balance. The wine is comprised of 92% Chardonnay and 8% Muscat. The Chardonnay is the special musque clone from the Mudd vineyard and was fermented in stainless steel tanks. The Muscat comes from the Mudd West vineyard and was fermented on its skins (like a red wine), then raised in new French oak (for three months) and blended into the final wine. This is a delightful, gregariously aromatic, satisfying, jewel-like white wine. The 2008 Cuvee Tropical is ideal as an aperitif or as a match with mildly spicy foods and Pacific Rim flavors. The Cuvee is also at home with shellfish, white-fleshed fish and fresh cheeses. Our Cuvee Tropical is always comfortable with a variety of world cuisines from Japanese to Indian to Mexican to Caribbean to Spanish and back to American, so we encourage experimentation.

2008 Brick Kiln Chardonnay

Restraint, elegance, finesse. These are the words that come to mind when we taste the delicious new vintage of our Brick Kiln Chardonnay. This lemon-colored, green-flecked white wine is clean and dry with flavors and aromas of citrus fruits, green apples, minerals, lemon confit and brown spices. The wine was barrel-fermented in two older French oak puncheons and two older Slovenian oak hogsheads and remained on the lees for ten months. Usually Brick Kiln reminds us of a ripe Macon with some oak, or a village level Cote-de-Beaune, but this year because of the cooler vintage and the larger format older barrels the 2008 Brick Kiln is more reminiscent of a premier cru Chablis. There is the roundness of Chardonnay that we crave but also the linearity from the cool year that provides balance and modesty. As always the fruit was hand-harvested from our Brick Kiln vineyard in Bridgehampton. The fruit was gently whole cluster-pressed, the wine handled minimally and bottled by gravity on August 14, 2009. The secondary malo-lactic fermentation was completed and the wine possesses medium body, medium alcohol, balanced acidity and a long flavorful finish. Drink this wine with lobster and scallops, mushroom risotto, roast chicken, arctic char or smoked trout. Our 2008 Brick Kiln Chardonnay is best consumed within three to four years of its release. 158 cases produced.

2007 L'Enfant Sauvage Chardonnay
This is a Chardonnay that is left to its own devices. Fermented with naturally-occurring wild yeast and allowed to go through a malo-lactic fermentation on its own, we barely touch this wine. We hand-pick the grapes from our Brick Kiln and Sculpture Garden vineyards, gently press them and put the juice in brand new French and Slovenian oak barrels for thirteen months and let the wine make itself. What we get year after year is astonishing. The 2007 L’Enfant Sauvage is a beautiful rich gold color. The wine is dry, full-bodied, has 13.1% alcohol (naturally, no chaptalization) along with balanced acidity. There is intense fruit character and good concentration. The rich, creamy flavors remind one of golden delicious apples; some baked and some fresh, brioche, brown spice, pears, butter and a touch of candied lemon. The flavors are alive and complex and the wine possesses a long persistent finish. This is likely the most restrained and elegant version of this wine yet, and hurray, we have 408 cases! Pair our 2007 L’Enfant Sauvage with rich fish and shellfish dishes like lobster, scallops, wild salmon, artic char, shad roe or alternately with roast chicken, veal dishes or preparations utilizing truffles. 1 case maximum per customer.

2008 Clones
“Clones”, a barrel-fermented chardonnay with a twist, will fit the bill with delicious style. Clones is an exotic white blend that is based primarily on ten distinct clones of Chardonnay and also includes a small percentage of five other grape varieties. The 2008 version is composed of 90% Chardonnay, 6% Tocai Friulano, 1% Gewurztraminer, 1% Aligote, 1% Semillon and 1% Viognier. This dry white wine is straw-colored with medium intense aromas and flavors of pear, apple, mineral, brown spice and citrus fruit. Our 2008 Clones is medium-bodied, has moderate (12.7%) alcohol, juicy acidity and long, persistent flavors. The wine was fermented and raised in 24% stainless steel barrels, 51% older neutral French and Slovenian oak barrels and 25% new French oak barrels. The twenty-five percent in new oak was fermented with wild, ambient yeast. The integration in our 2008 Clones is wonderful with a fine balance of fruit, acid, alcohol and oak. The wine shows finesse with a paradoxical texture of rich and round with a precise and angular mouth-feel. This makes a truly excellent bottle of Chardonnay. The fruit for the wine was all hand-harvested and whole cluster-pressed. The juice and wine were handled minimally and the wine was bottled by gravity on September 4, 2009. While irresistible now, our 2008 Clones will improve for a year or two in the bottle and drink well for three to five years. Pair this tasty white with a roast chicken, smoked trout, crispy skin salmon or char, sautéed scallops or a mushroom risotto. 462 cases produced.

2008 Ramato
October is always a magical time with the harvest in full swing and the coming of the orange harvest moon. To match this special time and that special moon we have a new special “orange” wine, Ramato. Ramato refers to the old Friulian-style of fermenting Pinot Grigio on its skins, thus creating a coppery-colored wine. All the Pinot Grigio fruit (from both our home farm and the Mudd West vineyard on the North Fork) for our Ramato was hand-picked, handled minimally, fermented on its skins in small bins and raised in older French and Slovenian oak for nine months. There are aromas and flavors of spice, apricots, pear skin, tropical citrus, baked apples and peaches. The wine has balanced acidity, only 11.4% alcohol, medium-plus body and great persistence of flavor on the finish. This dry, exotic, textured and aromatic wine falls somewhere between a white and a red but does not fit neatly into the pink category. Pair our Ramato with hard cheeses, charcuterie, fish, chicken and pork preparations that include spices, nuts, grains or squash. Exotic, lightly spiced and earthy foods will work marvelously with this wine. Our 2008 Ramato will also be a great addition to the Thanksgiving table with its cornucopia of savory and sweet flavors from the roast turkey and cranberry sauce to mashed sweet potatoes and sausage stuffing! This is a delicious and unusual wine that yearns to be seen, smelled and tasted. 222 cases were produced.

2008 Meditazione
Meditazione is an exotic, non-traditional white skin-fermented blend inspired by the “Vino da Meditazione” wines in the Friuli region of Northeast Italy. This is our fifth vintage of this wine and we are thrilled that the following for our Meditazione by consumers, the press and sommeliers has soared (Paul Grieco of Hearth and Terroir in NYC has called Meditazione “the greatest white wine in America”). So much so that we have made enough of the wine to send to the wine club for the first time! This is a style of wine that is ancient yet only relatively recently revived and touted in the wine world as part of the “orange” wine movement. Indeed the color of these wines is darker than other whites due to the skin maceration; ours has a beautiful rich, dark golden hue. Our 2008 Meditazione is comprised of 27% Sauvignon Blanc, 27% Chardonnay, 16% Tocai Friulano, 16% Muscat Ottonel and 14% Pinot Grigio. All the fruit for our Meditazione was hand-harvested from our estate in Bridgehampton, de-stemmed and the grapes were fermented together on their skins for ten days in an open-top fermenter. Raised in 63% new and 37% old/neutral French and Slovenian oak puncheons, hogsheads and barriques for 18 months, this is a textured, aromatic and delicious white wine that appeals to both the senses and the intellect. Our 2008 Meditazione is dry, medium-plus in body, has moderate alcohol and juicy acidity. The flavors and aromas are exotic, concentrated, penetrating and complex. They remind one of chamomile tea, citrus and apple blossoms, fresh and dried apricots, pear skin, brown spice, nuts, peach and honey. This rich wine has sex appeal and a long persistent finish. Drink our 2008 Meditazione with game birds, pork belly, sausages, aged alpine cheeses and fish dishes containing nuts, seeds or squash. It will also be excellent with veal Marsala and items with sherry sauces. Do not over chill this wine as it will mute the flavors, and try thinking about it more in the context of a red wine. 358 cases were produced. One case limit per customer.

2007 Envelope
We have continued to push the envelope with this wine until it is just right. The ‘04 and ‘05 versions were all Chardonnay. The 2006 saw the addition of Gewurztraminer which brought wonderful concentrated exotic aromatics to the fore. But we wanted some lightness and floral lift in the wine so with the 2007 Envelope we have introduced Malvasia Bianca to the blend and we love the results. The 2007 Envelope is comprised of 84% Chardonnay, 11% Gewurztraminer and 5% Malvasia Bianca. This is an exotic white wine inspired by the “Vino da Meditazione” wines produced in the Friuli region of Northeast Italy. All the grapes were hand-harvested from our estate in Bridgehampton, de-stemmed and fermented on their skins in an open top fermenter. The wine was raised in two new and one older French oak barrel for thirteen months. The 2009 is made from 100% hand-harvested Cabernet Franc grapes that were whole cluster-pressed and fermented in stainless steel. This is a dry, crisp, medium-bodied Rosé. The color is the palest of the three Rosés and displays an elegant coppery, slightly salmon hue. In this vintage, as in the past, the flavors and aromatics of the Cab Franc are the lightest and most ethereal. This wine possesses a beautiful red berry, mineral, floral, citrus profile coupled with a long flavorful finish. Hints of light strawberry and raspberry are apparent in this clean, fresh and delicious rosato. The fruit this year was from both the Croteau Farm Vineyard and the Mudd West Vineyard. 2009 Rosato di Refosco

2009 saw the first harvest of our Refosco (a wonderful indigenous Friulian red grape variety) grapes off our new vineyard in Bridgehampton. When the grapes arrived on the crushpad we tasted and evaluated and thought, hmm, first harvest, cool, late vintage these grapes are zippy and tasty and we can either make good, everyday red wine or excellent, expressive, special Rosé. Of course we decided to go the excellent route! So we took the hand-harvested fruit, whole cluster pressed it and fermented the juice in a small stainless steel tank. What we have is dynamite, dry, delicious, pink-hued, crisp, balanced rosato. The aromas and flavors are more sauvage than the Tre Rosati and reminiscent of the wonderful alpine wild strawberries called fraise des bois and just ripe tart blackberries that still retain a fairly red color. There are also floral, citrus and mineral notes on the lengthy finish. This is a medium-bodied, tasty rosato that is also quite versatile at the table. Match with prosciutto and melon, fricos, fish salads, pastas, porchetta and poultry. 118 cases made.

2008 Rosso Fresco
Yummy! This is the first word we wrote down when writing the notes about our new 2008 vintage of Rosso Fresco. Rosso Fresco is an easy-going red blend whose varieties and proportions change with each vintage. The 2008 version is comprised of 58% Merlot, 28% Syrah, 10% Petit Verdot and 4% Dornfelder. There are aromas and flavors of black raspberry, black cherry, plum, spice and earth. This dry red wine is medium-bodied, has moderate 12.9% alcohol, balanced acid, very soft, silky tannins and a juicy persistent finish. This fun, friendly red wine pairs well with pastas and just about any fish, fowl or four-legged food you serve with it. The 2008 Rosso Fresco has a North Fork of Long Island AVA, and is made from hand-harvested grapes from the Mudd and Mudd West vineyards which were de-stemmed, crushed by foot and punched down by hand. This wine was handled minimally and bottled by gravity. We bottled 1226 cases of this wine as well as filling twenty 5 gallon kegs for restaurants to serve by the glass. This could be the wave of the future for by-the-glass programs as it reduces the cost of the wine, is better for the environment and saves on space and waste issues! Our 2008 Rosso Fresco is a very versatile red wine and will bring you year round pleasure. If you are drinking Rosso Fresco in the intense heat of the summer, try putting a slight chill on the wine and watch how it blossoms with the food from your grill!

2008 Due Uve
We love offering up new wines both because it provides a new experience for all of us and it allows us as wine producers to keep growing, experimenting and perfecting our ways in the great pursuit of deliciousness and happiness. We have been quite pleased with the results we have gotten from our Syrah plantings on the North Fork at the Mudd West Vineyard and decided to feature this grape in a fun, everyday, slightly rustic red wine. “Due Uve” means two grapes in Italian and our new wine is exactly that…two grapes, Merlot and Syrah. Made from 68% Merlot and 32% Syrah all from the North Fork, our 2008 Due Uve is a purplish red color and offers youthful, juicy, primary fruit flavors mixed with some earthy, meaty, spicy notes. There are aromas and flavors of plum and black raspberry, violets, black pepper, bacon, mushrooms and dried herbs. The tannins are moderate and soft. The wine possesses medium body, moderate (13.0%) alcohol and balanced acidity. There is only older oak employed in the fermentation and maturation of this dry red wine. This is a wine to take advantage of in its precocious youth. Due Uve is playful and tasty and would be great with a hunk of country pate, a sausage pizza, Bolognese sauce and your favorite pasta, lamb burgers, grilled portobellos, bone marrow on toast or a flank steak with soy and mustard. As always, all the fruit was hand-harvested, de-stemmed (but not crushed), stomped on by foot and punched down by hand in small one ton bins. The wine spent ten months in older oak barrels and was bottled by gravity on August 14, 2009. 227 cases produced.

2008 Blaufränkisch
We are always very happy to release a new vintage of our lovely Blaufränkisch. Over the years this variety has proven its affinity with our climate and we love to use it both as a blending grape and as a varietal bottling. This is a special grape, classified by Charlemagne in the 8th century and grown all over middle and northern Europe with a particular fondness for Austria. Our 2008 version is comprised of 75% Blaufränkisch and 25% Merlot. The wine has a clear ruby red color with purple inflections. The aromas and flavors are full of red and black raspberries, plums, anise, liqourice, spices and a touch of smoked meat. This is a dry, supple, sexy wine with Burgundian texture. The alcohol is moderate, the acid juicy and balanced, the tannins are present but soft, and the wine offers a great deal of pleasure and a delicious finish. All the fruit was hand-picked from our farm in Bridgehampton, de-stemmed, crushed by foot and punched down by hand in small one ton bins. The wine was raised in one to eight year old French, American and Slovenian oak barrels for fourteen months. The wine was bottled by gravity without fining or filtration on December 18, 2009. Our 2008 Blaufränkisch is a great match with game (furred or feathered), hard mountain and washed rind cheeses, earthy grain and squash based dishes, and would be yummy with a pasta dish like pappardelle and wild boar ragu. 318 cases produced.

2007 Sculpture Garden
This beautiful ruby red wine is a blend of 88% Merlot from the Sculpture Garden vineyard (the oldest on the South Fork, planted in 1982) and 12% Blaufrankisch from our Sylvanus vineyard. All the fruit was hand-harvested, destemmed but not crushed, stomped on by foot and punched down by hand. The wine went through a natural malo-lactic fermentation and was raised in French and Slovenian oak barrels for twenty-two months. Only six percent of the oak was new, seventy-one percent were one year old barrels, and the other twenty-three percent were barrels that were four years old or more. The wine was handled minimally (only racked twice) and was bottled by gravity with no fining or filtration on August 5th, 2009. The wine may throw sediment over time and we would recommend decanting after several years in the bottle. While delicious now this wine will improve in the bottle for six to eight years and drink wonderfully for a decade. Our 2007 Sculpture Garden is awash in aromas and flavors of plums, black cherries, blueberries and blackberries. There is an underlying earthy minerality and touch of smoke and spice on this seductive and complex red wine. The wine is dry and retains a medium body, moderate (12.7%) alcohol and balanced acidity. The wine reflects the warm 2007 growing season with wonderfully ripe fruit yet also reflects our moderate climate with its savory rather than sweet profile and an elegance that is alluring. There is always a silky, smooth, supple quality to our Sculpture Garden and the great length is complemented by a textural, aromatic and flavor complexity. It is as if the wine has great formality with a casual air like a well-pressed yet quite comfortable linen suit. When feeling more formal pair this wine with Long Island duck, lamb chops or a prime rib roast and when you’re in a more casual mood match with pastas, burgers and grilled fatty fish. 348 cases produced along with 6 three liter bottles and 48 magnums.

This is a beautiful, delicious and unique red wine. This year our Research Cab is a field blend of almost all the varieties in the “Research” Vineyard on the North Fork. Made from 44% Merlot, 25% Cabernet Sauvignon, 9% mixed whites, 5% Blaufrankisch, 5% Pinot Noir, 3% Cabernet Franc, 3% Petit Verdot, 3% Dornfelder, 1% Syrah, 1% Barbera and 1% Malbec. All the fruit was hand-harvested, de-stemmed, crushed by foot and punched down by hand and shovel. The wine spent 21 months in 4 barrels and 1 hogshead, 19% of which was new oak (the rest was older). This is a dry, medium bodied red wine with moderate alcohol and balanced juicy acidity. There are pronounced, wild aromatics and flavors of violets, lavender, licorice, boysenberry, blueberry, wild cherry, black raspberry, currants and something reminiscent resinous thyme and sweet sage. There is a kiss of spice and a touch of vanilla in this decidedly high-toned, treble clef-like red wine. The wine was only racked twice, is not fined or filtered, and was bottled by gravity on August 4th, 2009. Our 2007 Research Cab will be comfortable pairing with rich fish dishes like pancetta wrapped monkfish and swordfish with olive tapenade, a strip steak with green peppercorn sauce or a pork roast. While this wine is quite delicious now it will improve in the bottle for five or six years and drink well for eight to ten. Only 118 cases were produced, along with 24 magnums and two 3 liter bottles.

2006 MUDD
The 2006 MUDD is a delicious red blend made up of 72.6% Merlot, 19.5% Cabernet Sauvignon, 6.4% Blaufrankisch and 1.5% Dornfelder. The color is a clear, beautiful ruby red. This dry wine has ripe, pure flavors and aromas of plum, black cherry, black raspberry, earth and spice, which are balanced by juicy acidity, medium body and moderate alcohol. A silky texture displaying integrated, plush tannins leads into a lovely lengthy finish. Almost all of the fruit came from the Mudd and Mudd West vineyards along with some beautiful Merlot from Sam McCullough’s vineyard. It was all picked by hand, de-stemmed, crushed by foot and punched down by hand and shovel. The wine spent twenty-two months in the cellar in 20% new oak and the rest older oak barrels. Our 2006 MUDD was bottled by gravity on August 28th 2008 and 448 cases were produced. It was not fined or filtered and may throw a deposit over time. The wine is quite tasty now but will certainly improve during five to seven years of aging. Match this wine with duck confit, leg of lamb, mushrooms & grains, veal or rich fatty fish like black cod or wild salmon, especially if there is some bacon involved.

Over & Over-Variation 3
This is a ridiculously fun and delicious red wine! There are people in the world making red wines with a ripasso method and there are people in the world using a solera system of blending for some red wines but we know of no one, other than us, who have put both together to create this original and tasty red wine. It all began with four barriques of 2004 Merlot that was taken out of barrel and re-passed over the fresh 2006 Merlot and Dornfelder fruit. The wine underwent another primary fermentation and was racked to barriques, hogsheads and puncheons where it underwent another malo-lactic fermentation. Half of the wine was taken and bottled after ten months in oak, and this was Variation One. The other half remained in barrel until the next harvest where it was re-passed over the 2007 Merlot, Syrah and Dornfelder fruit. It was all repeated and we bottled half as Variation Two. We did this again in the 2008 harvest and have bottled Variation Three that we are now offering you. This wine has undergone four primary and four malo-lactic fermentations and has in it memories of the 2004, 2006, 2007 and 2008 harvests. We will continue to do this over & over. So what does it taste like? Violets, black raspberries, black pepper, black cherries, baking spices, earth and game are the primary descriptors that come to mind in this well-balanced, dry, medium-bodied and integrated red wine. Delicious, long complex flavors and textures fill one’s mouth and mind. The finish is persistent and shows more of the mature secondary characteristics from the past vintages. This is a wine that reflects the old and the new, the North and the South, the warm and the cool and provides us with something entirely different to experience and think about. Drink this wine with all manner of game birds, pork, veal, grains, mushrooms and root vegetables. 228 cases produced.

Pazzo
Finally, dessert wine! Pazzo is delicious. Pazzo is a fortified and maderized wine made from the Merlot grape, the first and only on Long Island and maybe the world! Made in the manner of the wines of the island of Madeira, we present you with another Island Wine. For a long time we wanted to create a wine to pair with all the activities that come after the entrée; whether that is a cheese course, or nuts or a dessert featuring chocolate or fruit or just a tipple sitting by a warm fire. Now we have just the right drink and it only took us five years to make! It all started with merlot fruit from the 2004 vintage that was hand-harvested and crushed by foot in small one ton bins. The wine was fermented dry, then fortified to 18% alcohol (with neutral grape spirits), put in barrels and placed outside to maderize for five years. This means the wine was subjected to the elements, the heat of the summer and the cold of the winter. The wine evaporates and is not topped up. The wine cooks, the wine oxidizes. Something magical begins to happen to the aromas and flavors, just like what happened to the original Madeiras in the ballasts of ships making a trip across the equator a hundred and fifty years ago. Our Pazzo is filled with aromas and flavors of figs, caramel, orange peel, spices, raspberry liqueur, nuts and dried fruit. So now we have finally decided to bottle some of this elixir. We took half of the wine (the other half will remain outside for another five years for the ten year old version!) and when the merlot arrived for our rosato this year we pressed and settled the juice and added a bit of that sweet merlot juice to give our Pazzo just a pinch of sweetness (1.6% or 16g/L). This was the final touch to bring the wine into that pleasure place of great balance, length and complexity. Pazzo means “mad” or “crazy” in Italian and this is our play and nod to the island of Madeira, and her wines, and the fact we are a little nuts to make a wine like this…though when you taste it you will be as happy as we are that we did. This rich dessert wine is bottled in half bottles (375 ml) and we produced 152 twelve-bottle cases.
